Pasta Prima
How much pasta to feed 130 people?!?
My fiance and I are having apx. 130 guests for our wedding. We will be serving a ceasar salad, garlic breadsticks, tortellini prima vera, chicken alfredo fettucini, and spaghetti and meatballs. We’re stumped on how much of each pasta to make, since we are making everything ourselves. So far we have made 2 large chafing(3″ deep) dishes of each pasta. Is this enough?? We don’t wantto run out of food, but we also don’t want to have a ton of leftovers..
75g per person is a respectable portion. Considering there are so many choices, and probably side dishes too, I wouldn’t be worried about serving a little less. 8kg of each type (weighed dry) will be more than enough, but you could probably get away with 6kg.
